Recipe - Lamb Mince Casserole

Back from holiday and it's time to get back posting...

This is a quick, tasty and filling dish that you basically can modify to suit your own taste. I served it (as you can see below) with home made garlic bread. Something that worked very nice ;)

Lamb Mince Casserole

Ingredients
500g lamb mince
1 yellow onion, split and sliced
3 garlic cloves, chopped (or more to taste)
1 red chili, chopped
2 red peppers, sliced
4 tbsp olive oil
1 meat stock cube
300 - 400 ml water
2 - 3 tbsp chilli sauce (or more to taste)
200 ml mixed, cooked beans
100 ml unpitted black olives
1 bundle of parsley, chopped
Plenty of fresh tomatoes, sliced and chopped
Salt and pepper
Method
Fry the mince in the olive oil until it starts to brown and is fried through. Add the onion, garlic, chili and pepper. Let this fry for another minute or so.

Add the stock cube, the water and the chilli sauce and let this simmer for about 30 minutes.

Add the beans, olives, tomatoes and the parsley. Let this heat through. Add salt and pepper to taste.
